There is only one message defined in the combined speed and cadence device profile, and every byte is fully consumed. Unfortunately, there is no way to page data within that device profile, so there is no way to add custom data.
If you are building a custom Speed + Cadence sensor and have the flexibility to broadcast on two channels then you have some options.
One option is to broadcast the Speed on the Speed Only device profile, and cadence on the Cadence Only device profile. These profiles do have data paging, so we could help you add data into these streams if you like.
A separate option is to continue using the combined Speed & Cadence device profile, and use a second, custom channel on the open network to handle this extra data.
